According to Health Canada, food safety involves proper chilling of foods. The temperature danger zone lies between 4°C (40°F) to 60°C (140°F) and it is the range where bacteria can multiply exponentially. Try to refrigerate or freeze your raw meat, poultry, fish, and seafood as soon as you can, and make sure your refrigerator is always set to 4°C (40°F) or lower, and your freezer is set to -18°C (0°F) or lower. Don’t forget to refrigerate the fresh fruits and vegetables as well – they only stay fresh if you refrigerate them, and this is particularly true for pre-cut and ready-to-eat produce.
When storing raw meat, poultry, fish, and seafood in the refrigerator, it’s important to separate them from other foods by storing them in separate containers and placing them in the bottom shelf so their raw juices won’t drip onto other foods. Fresh meat, fresh poultry, and some seafoods can be stored in the refrigerator for a couple of days, but if you plan on keeping them for longer, then they should be stored in the freezer.
