But did you know that eggs can be contaminated with salmonella and other bacteria that cause food poisoning? To get rid of salmonella and other harmful bacteria in eggs, it’s important to cook them to an internal temperature of at least 74°C (or 165°F). According to Health Canada, eating raw eggs can be risky for children, the elderly, pregnant women, and people with weakened immune systems. Eggs are healthy additions to most people’s diets because they provide excellent sources of protein and vitamins D and B12. But it’s important to make sure they are cooked properly before they are consumed.

When cooking with eggs, you should also remember to refrigerate the leftovers within 2 hours of cooking. Health Canada’s food safety guideline says any leftovers containing eggs should be placed in the freezer for storage if they are not consumed within 3-4 days. For those who love eating hard boiled eggs – these can be stored in a sealed container and refrigerated for up to a week. In general, both raw and cooked eggs should not be kept in room temperature for longer than 2 hours. Eggs can spoil quickly when they’re left in the temperature danger zone of 4°C to 60°C (40°F to 140°F).
