Tips for Refrigerating Cheese

A variety of cheese in a refrigerated showcase

We all know there are many varieties and flavours of cheese available in grocery stores and farmer’s markets. But did you know that most types of cheese require cold storage for both taste and food safety? In essence, cheese is a dairy product made from the milk of animals like cow, sheep or goats. Due to its animal protein content, it is necessary for most types of cheese to be stored in cool temperatures to prevent spoilage or bacterial growth. Soft, crumbly cheeses like brie, goat cheese, cottage cheese, and blue cheese can be enjoyed as a delicious addition to a meal or as a satisfying snack or appetizer on its own. Due to their high moisture content, soft cheeses can go bad very easily, making it critical for them to be stored in refrigerated spaces. According to expert cheesemakers interviewed by TastingTable, cheese paper is best used for wrapping cheese products in the refrigerator. Cheese paper is typically made of porous but strong wax paper materials that blocks sunlight and allows the cheese to “breathe”. Since cheese is made of milk and bacterial cultures, it’s important to maintain air circulation with porous wrapping materials like cheese paper to keep the product fresh and moist. Last but not least, expert cheesemakers say most cheese products should be kept in the less cold corners of the fridge, near fruits and vegetables, to prevent the cheese from becoming frozen (which could change the flavour) and to preserve their moisture content. Most hard cheeses will stay fresh for 3-4 weeks in the fridge if opened (up to 6 months if unopened). Soft cheeses, on the other hand, will need to be consumed within a week of storage in the fridge or their freshness will deteriorate.
